The First Pancake

Have you ever made pancakes? If so, when the pan or griddle is hot enough, do you pour just a dollop of batter on to the griddle to make sure it is hot enough and to ensure the pancakes will cook evenly? I learned that practice from my dad. And somehow, that little pancake is the best of the bunch.
